Here's a little about Nicole:

Originally from New Hampshire, Nicole enjoyed her childhood on a small farm in Hopkinton. After earning a B.A. in Economics with a focus on Environmental Economics from the University of New Hampshire, and completing graduate work in Finance from Boston University, Nicole began her business career as an Associate at a prestigious Labor Economics firm in NH where she worked for over nine years. Nicole, along with her mother Joan, founded the natural foods manufacturing business, Mediterranean Delights. Mediterranean Delights, based in Southern Vermont, successfully serviced/distributed to retail and foodservice distribution channels nationally (All Natural, Certified Organic, HACCP approved & third party audited). After thirteen years in the food manufacturing business, Nicole moved to the Catskill Mountains and began working with non‐profit organizations providing guidance and technical assistance to value-added food producers, farmers and agricultural infrastructure enterprises.

Currently, Nicole serves as the Owner of AgriForaging, Inc., is the radio show host of "All Things Local" on WIOX 91.3 FM, President of Hickory Advisors, LLC an Endowment Fund Management Firm, serves as a Board Trustee at Hanford Mills Museum in East Meredith, NY plus volunteers as the Administrator for the New York State Farmstead & Artisan Cheesemakers Guild. Nicole resides in the midst of the gorgeous Catskill Mountains (Delaware County) with her husband.
